Durban Prawn Curry

Challenge winning dish from Masterchef SA 2012

  • 1 large onion, finely chopped
  • 1 sprig curry leaves
  • 1 green chilli, chopped
  • oil, for frying
  • 15ml garlic and ginger paste
  • ½tsp cumin powder
  • ½tsp coriander powder
  • 5ml turmeric
  • 30-45ml chilli powder
  • 6 medium-sized jam tomatoes, peeled and pureed
  • 500g prawns, shelled and deveined but keep tails intact
  • salt, to season
  • fresh coriander leaves
  • Spekko Basmati rice, to serve
