Hayden Quinn Crispy Skin Pork and Hake Salad

1. Prepare the pork, score the skin with a sharp knife. 2. Sprinkle over the vinegar, rub into skin and pat dry with kitchen towel. Salt the skin well and rub into scores. Now you can leave the pork belly overnight uncovered in the fridge to dry out or you can get straight into the cooking. (Leaving it overnight helps gain a better crackle). 3. Preheat your oven to 250oC. 4. Place the pork belly into a thick base roasting tray pouring the apple juice and apple cider around the edges of the tray until the liquid reaches to just below the skin (do not wet the skin).
