CHOCOLATE FONDANT WITH AMARULA CRÈME ANGLAISE AND GRILLED PEAR

Preheat oven 200oC. Dust four ramekins with butter and flour. Melt the butter and chocolate in a double boiler. Whisk the eggs and castor sugar in a mixer until light and fluffy. Slowly add the cooled chocolate mixture. Add 15g of flour. Fill ramekins ¾ of the way full and bake for 8 minutes. Remove from the oven and allow to cool. Turn onto plates.
