Hope Malau’s Coconut Squares
  • 100g butterChopped
  • 120g Caster sugar
  • 1 egg
  • 40g self raising flour
  • 110g Flour
  • 200g Smooth Apricot Jam
  • 2 EggsLightly Beaten. Topping
  • 80g Caster sugarTopping
  • 500ml Desiccated Coconut(2 Cups) Topping
  1. 500 ml (2 cups) desiccated coconut Preheat the oven to 180°C and line a small rectangular or square dish with baking paper.   1.            In a medium mixing bowl, beat the butter, sugar until light and fluffy, Mix in the egg and combine well. 2.            Sift the flours into the butter mixture and mix well. Spoon into the prepared dish and evenly press down into the base. Bake until lightly golden, about 15 minutes. 3.            Topping: combine all of the ingredients well together. Remove the base from the oven and spread the topping over and continue to bake for 20 minutes or until the coconut is golden. Completely cool before cutting.
